Agurke (cucumber) Salad

* A "Danish delicacy" clipped from newspaper

Ingredients:

2 cucumbers, washed and sliced very thinly
1 onion, sliced
salt
1 c sugar
1/2 c vinegar
1/4 c water
pepper

Layer cucumber, onion slices and salt in a dish. Put a plate and weight on it and let stand for 2 hours, or until liquid is out. Drain, rinse in cold water, and mix with rest of ingredients.

This will keep in a covered dish for weeks.
