Mandarin Pie

Ingredients:

1/3 c butter
3/4 c flour
1/4 c brown sugar
1/8 t ginger
1/2 c walnuts, chopped
3/4 c milk (cold)
1 c sour cream
1 T orange zest
1 - 4 serving box vanilla pudding
1/2 c orange marmalade
1 T water
1/2 c mandarin oranges, drained

Melt butter in heavy skillet over low heat. Add flour, sugar, ginger, and walnuts. Blend well. Cook over low heat, stirring, only until crumbs are toasted a golden brown, 4-6 minutes. Reserve 1/2 c crumbs for garnish. Press remainder immediately into bottom of 8 " pie pan.

In small bowl of mixer blend milk, sour cream, orange peel, and pudding mix on low speed. Then mix on high about 30 seconds, or until thickened. DO NOT over mix.

Pour into crumb crust.
